Cucumber – Pink Radish Salad
This cool salad is ideal for a hot summer afternoon lunch. A perfect accompaniment to any meal or a mini-meal in itself!

- 2C Pink Radish, sliced
- 1 ½ C Cucumbers, peeled and sliced
- 1Tbsp Curd, toned
- 1 Tbsp. Mint leaves
- ½ tsp Shahi Jeera Powder
- Portion size: 4
- Serving size:3/4 cup
Procedure:
- In a large salad bowl mix sliced cucumbers and pink radish.
- Crush mint leaves in a mortar using a pestle.
- After 15 mBeat curd lightly adding 1 Tbsp. water and add the above mint mixture and shahi jeera powder.inutes, lightly oil the dough and divide the dough into 8 balls and roll each ball into very thin rotis using wheat flour. Roll all 8 and then start baking.
- Pour the beaten curd –mint dressing in the salad bowl and mix well.
- Divide into four portions and enjoy this cool summer salad.
